My intention when starting the blog was
solely to post pictures of Peyton but I am going to deviate today and add a recipe. Mostly because I have told several of you lately about my taco soup and wanted to share the recipe with you. So here goes...
Tiffany's Tex Mex Chicken Taco Soup (I am calling it mine because I stole it from
Emeril and changed it)
1/2 cup diced onions
1/2 cup diced green bell peppers
1 tablespoon minced garlic
vegetable oil
1 whole
rotisserie chicken shredded
1 package taco seasoning mix
1 (8 ounce) jar salsa
1 (14 ounce) can kernel corn
1 (16 ounce) can ranch style beans
2 (4 ounce) cans tomato paste
2 (14 ounce) can chicken broth (I use low sodium)
1 (8 ounce) package fat free cream cheese
Directions: Saute onions, green peppers and garlic in a small amount of vegetable oil. Add chicken, taco seasoning, beans tomato paste and broth. Bring to a simmer and cook for 20 minutes. Place cream cheese in separate bowl. Using a measuring cup take some of the hot liquid from soup pot and pour over cream cheese to melt. Then add the mixture back to soup. Simmer on low another 10 minutes. Serve with tortilla chips and
